What is Honey Processed coffee?

The process refers to the strategy used to transform a ripe coffee fruit into a dried seed that can then be roasted. The most common strategy is the Washed Process, meaning that after harvesting, the coffee fruits are pulped and then soaked in water, which creates an environment conducive to fermentation that eats away at the mucilage, or nectar type gel, covering the seeds. After this “bath,” the seeds are no longer sticky and are then dried for several days before being bagged up. In a Honey Process, the coffee fruits are harvested, pulped and then immediately laid out to dry. The mucilage stays on the seed throughout the whole drying process, which takes around 20 days, and is the cause of the incredible sweet and, well, honey-like, nectary flavors you find in this coffee.

No honey is actually used in the production of Chica Bean’s Honey Process, although with its natural sweetness, it wouldn’t be surprising if there was!

COFFEE SUGGESTIONS

The subtle and intriguing flavors are the best part of this specialty coffee. It is a clean cup with a silky body that’s on the lighter side. This coffee is phenomenal brewed in most methods. Pour Over and Drip devices highlight its characteristics better than heavier methods like Moka Pots. We recommend always trying the first 2 sips of your cup of coffee without any additives to experience its natural goodness. After, if it’s your preference, a bit of sweetener doesn’t harm this coffee. Because of its delicate nature, we do not recommend adding milk.

Doña (or Mrs. in English) Maritza is a woman who embodies the term fabulous. Like all of our producers, she is devoted to her family and her coffee. Unlike most of our other producers, she is not from a coffee producing family, but rather dreamed of owning her own land with coffee from an early age. She is progressive in her farming and processing practices and is always looking to improve. She has also played a huge role in Chica Bean as she is the mother of co-founder Josue. Your coffee will be roasted 1 or 2 days before it is shipped to you directly from our roastery in Guatemala. After leaving us, it usually takes around 3 days to arrive at your doorstep, meaning you receive your coffee within a week of it being roasted
