In Guatemala, we call green coffee beans "café oro", or "gold coffee" in English, because of the potential value it had for landowners in the early 1900s.

  • Process: Washed with a 36 hour fermentation and the addition of Cima Yeast

Chica Bean Washed Process

A delectable washed process coffee from one Doña Maritza of San Pedro Pinula, Jalapa at an altitude of 1475 mals (meters above sea level) to 1600 masl.

The notes you find in the final cup will of course depend quite heavily on the roast you use but in general, these seeds create an exceptionally balanced brew with chocolate, caramel, sweet lime, red apples, sugar cane, and fresh berries with a moderate body, exceptional balance, and a prolonged, sweet finish.

COFFEE SUGGESTIONS

This is a very flexible coffee so our only suggestion is to not be afraid to play around! Light, Dark, Espresso… you can’t go wrong with these seeds. that being said, a light to medium roast allows the subtle fruit flavors to shine!
